Coconut Chai Horchata

Horchata is a traditional Mexican drink, going back many centuries (read the history here!), that was originally made from dried and ground tiger nuts. The milky results are combined with water and sugar, then filtered to create a taste similar to rice pudding.

This version uses incorporates some of my favorite chai spices, like cardamom, cinnamon, nutmeg, and cloves and dates to sweeten. The perfect winter treat!

INGREDIENTS

1 knob of ginger

Three sticks cinnamon

4 Cardamom pods

3 Clove pods

1 TB coconut butter

3 - 4 Dates

1/2 Cup white long grain rice

1 Cup Almonds

DIRECTIONS

Toast all of the spices until fragrant on medium heat. Boil hot water. Place all ingredients, including spices, in a bowl and cover with 5 cups boiling water. Let sit for more than 3 hours.

Add in coconut butter and blend on high speed. Add more filtered water if needed. Strain with nut bag or cheesecloth. Heat up in a sauce pan and use an electric mixer for a super frothy warm drink!

Additional add in: cacao powder
